The game is also split the 3 routes into 3 separate .exe files, but functionally they play the same.

Why is it called Fate?
Probably its related to the different routes of the game. Shirou at some point of time asks either Rin or Sakura to stay at his house that night to keep them safe. Hence the « stay night » in the name. « Fate » part may mean how Shirou’s decision on asking one of them to stay at his house affects his fate/destiny.
Is heavens feel worth watching?
Excellently animated fight scenes and a plot that keeps you wondering about the characters’ fate. Some humor too. But overall, a much darker feel to FSN and UBW. A must-watch for fans of the Fate series.
Are H scenes in Fate canon?
In the Fate/Stay Night visual novel, yes. It is nasuverse canon that tantric ritual is the most efficient method of transferring prana between two people, and Shirou is far enough down the line in a relationship at the point it happens in Fate and UBW for it to be reasonable.
